Prawns marinated with pesto and grilled to perfection.
ITALIAN PESTO GRILLED PRAWNS
Ingredients
20-25 prawns, shelled and deveined
Salt to taste
Olive oil for grilling
Red chilli flakes for sprinkling
Pesto
¼ cup Parmesan cheese powder
Crushed black peppercorns to taste
3 tbsps pinenuts
¾ cup basil leaves
3-4 garlic cloves
Salt to taste
6 tbsps olive oil
Method
1. To make pesto, Grind pinenuts, salt, peppercorns, garlic and parmesan cheese powder to a fine powder.
2. Add basil and olive oil and grind to a coarse paste. Transfer into a bowl.
3. Add prawns and salt and mix well. Set aside for 10-15 minutes.
4. Insert marinated prawns on each satay stick. Similarly prepare the rest.
5. Heat olive oil in a non-stick grill pan, place prepared satay sticks and cook till the grill marks appear on both the sides.
6. Arrange them on a serving plate, sprinkle red chilli flakes and serve hot.
