Kenji’s “Traditional French Cassoulet”

The crust wasn’t super thick and I didn’t manage to break it with a spoon but it still tasted delicious and smoky. I served it with aligot on the side which was cool in theory but upon consumption honestly was not a great idea, it was way too rich of a pairing since i used duck legs as well. It was a very… gassy night lol!
This was such a fun Sunday activity!!!! It took almost all afternoon but I was working quite slowly enjoying myself browning all the meats. I had such a great time. I’m looking to make more slow foods this season, so feel free to leave me all day recipe recommendations !

I made this a few weeks back and just couldn’t get any kind of crust to form. Not sure what went wrong.
It was still delicious though. And be very mindful that your salt pork will be plenty of salt for the whole dish. The recipe mentions this, but it’s very accurate.
