


I’ve never had home canned mandarins. I’ve been seeing folks canning them when they’ve been on sale lately so I wanted to give it a go! Is this right? They taste pithy and weird and the skin being on seems to be a real flavor bizarreness. I used a peeled and sectioned the mandarins , packed in jars, topped with hot medium syrup and hot water bathed my pints 10 min. They look great but taste is ….ick? Did I do something wrong?

I’ve never tried canning oranges before but I’ve read they are best if canned along with grapefruit. Here’s a tested recipe from NCHFP
