Tuscan Vegetarian Pizza | Italian Country Recipes

In Florence you will find many of the regional pizzas, famous in the Tuscany region. I remember seeing Rick Stein visiting an elderly lady at her small farm in the region. Together they grabbed a basket and walked into her garden and picked all the vegetables and herbs they used for their Tuscan Vegetarian Pizza. I have stuck mostly to this and where possible using all freshly picked produce on the day. I hope you enjoy this truly authentic experience of an Italian Country Recipe.

Ingredients For: Tuscan Vegetarian Pizza : Italian Country Recipes

For the pizza base:
150ml warm water
1 heaped tsp of castor sugar
2 tsp of yeast with bread improvers (4 grams active yeast granules )
250 grams plain flour
1 tsp salt
1 tbsp of rice bran oil

For the topping:
Tomato paste with 3 cloves of crushed garlic
Mushrooms sliced
Mozzarella and finely grated parmesan
Any stalky fresh greens finely chopped
Ripe cherry tomatoes quartered
Garnish with fresh basil
Drizzle with extra virgin olive oil.
