This warming, lightly spiced, casserole is reminiscent of North African flavours. Using a readily available spice blend – Ras-el Hanout, chickpeas, mint and coriander leaf, along with chicken thighs, onions, tomatoes and peppers – you will want to make this again and again.
This was a big hit in my household, liked by older ones and younger ones due to its mellow and warming tones. With most of the items already in my pantry it’s a recipe I will be making regularly this winter.
