I’m pressure canning some chicken stock in my All American (Model 921). It came with 2 racks and everything says I read says I can can in two layers. I’m canning pints. The jars stick out about an inch above the top of the lid, but everything closes and locks fine due to the domed lid. Is this fine or can I only double layer with half pints? Thanks!

    I have the same model and it’s worked just fine as far as I can tell. You might be able to flip the middle rack so the rim is up giving you an extra 1/4in of space. As you got higher the 10min venting is more critical, please make sure the whole vessel is heated before putting the weight on

    Manual says 7 quarts, 19 pints iirc (it has been years since i consulted my nanual. No idea where it is lol). I will say I seldom run more than 14 pints at a time in either of my 921s. But yep, it looks like that when I do.

    As long as the lid closes you’re fine. I have the same model and can the same size. Works for me.

    if it makes you feel better-you’re creating a pressure vessel, pressure is based on gasses-the “rim” doesn’t matter because the gasses are filling the whole space (assuming it’s working correctly and sealed etc)
