Fried Zucchini with Garlic Aioli

Ingredients:
1 Large Zucchini or 2-3 medium size Zucchini
3 Cups Corn Flake Bread Crumbs (Gluten free)
1-2 Cups Flour (Sub Gluten free four)
4-5 Eggs
1 Tbsp Water
2 Tbsp Garlic Powder
2 Tbsp Onion Powder
1 Tsp Red Pepper Flake
1 Garlic clove (minced)
1/2 Cup Mayonnaise
1 Tbsp lemon juice
1 Tsp Olive oil
1/4 Cup Parmesan cheese (finely grated)
Parsley for garnish (chopped finely)
Salt and Pepper
Veg oil for frying

*1st peel some of the zucchini and cut into 1/4 in thick strips.

*In a large bowl add corn flake bread crumbs, garlic powder, onion powder, red pepper flake, parmesan cheese, salt and pepper to taste.

*Next in a separate large bowl add flour, salt and pepper.

*In another separate large bowl, crack eggs and add a little water. Beat eggs until combined.

*Bread your zucchini by dredging in flour (making sure to knock off the excess flour), dipping in the egg, and then into the breadcrumbs making sure the zucchini is completely covered.

*In a cast iron skillet, heat fry oil to 350 degrees Fahrenheit (make sure to NOT fill the oil up past 1/2 way for safety.) Fry zucchini for 3-4 minutes a side or until gold and brown. Place on a wire rack and immediately season with a little salt.

*Garlic Aioli: In a bowl combine mayo, garlic, olive oil, lemon, salt and pepper. Adjust ingredients to your taste and whisk until combined.

*Serve with garlic aioli on the side, grated parmesan and parsley on top as garnish.

  2. I've always loved zuchini sticks that we would order at the bar at university and always tried to make them taste like they used to….well!!! This is exactly perfect…they are so delicious thank you!!!
