to create this delicious dish. The combination of warm, fluffy bread and flavorful cheese filling makes it a perfect choice for a snack or a meal.
For approximately 17 pieces:
🥛Ingredients for the dough:
– 125 ml lukewarm water
– 125 ml lukewarm milk
– 7 g dry yeast
– 1 teaspoon sugar
– 1 tablespoon of yogurt
– 3 tablespoons vegetable oil
– 1 teaspoon salt
– Approximately 400 g all-purpose flour (Type 405)
– 1 egg white (keep the yolk for brushing)
🫕 For the cheese filling:
– Feta käse or Lor (Turkish cheese)
– Parsley
– Red bell pepper
👩🏻🍳 Preparation:
In a bowl, combine the lukewarm water and lukewarm milk. Add the dry yeast and sugar. Stir well and let it rest for about 5 minutes until the yeast activates.
Once the yeast is activated, add the vegetable oil, yogurt, salt, and egg white. Mix thoroughly.
Gradually add the flour and knead until you have a smooth dough. Knead for approximately 5 minutes until the dough becomes elastic and pliable.
Cover the dough with a cloth and let it rise in a warm place for about 45 minutes or until it doubles in size.
While the dough is rising, crumble the Fetakäse or Lor cheese and finely chop the parsley and red bell pepper. Mix them together and set aside.
Once the dough has risen, divide it into mandarin-sized balls and let them rest, covered, for another 20 minutes.
Using your fingers or the bottom of a glass, flatten the dough balls and create a hollow in the center. If desired, make cuts around the edges of the dough using a knife.
Fill the hollow with the prepared cheese mixture, and let them rise again, covered, for another 20 minutes until they rise nicely.
Preheat the oven to 190°C (375°F).
Lightly whisk the reserved egg yolk and brush it over the sides of the dough.
Bake the pide in the preheated oven for about 15-20 minutes until golden brown.
Remove the pide from the oven and lightly brush the sides with butter. Let it rest, covered, for 5 minutes.
