It's begging for at least one more Reese's cup in the center to balance it out and maybe a supersize one since the muffin head is more roomy 😛
This looks and sounds delicious! I love the addition of the pb cups on top and that the peanut flavor is throughout. I think you could use your favorite “regular” peanut butter in this recipe. Great recipe and review.

Sounds outstanding! Right away I was confused that you put the Reese's cup in after a little bit of batter, then put more on top. Should have you put more in first because of the settling like you saw.

For future reference, you can save a dry cake/cupcake with a brushing of simple syrup (before frosting).
But from looking at the recipe, I'd replace the water with a mix of sour cream and buttermilk, add a box of pudding mix, another egg, plus some espresso powder and vanilla (not for the dryness, but to add flavor). I'd also check the doneness with a thermometer. Cake mixes are dry when you follow the box! 🙈
I know that makes things a bit more advanced (I understand this recipe is supposed to be easy!) but I feel like those changes would help make a better cupcake.
But whatever way you prefer doing it is the best of course! 😊I always love the baking videos!!! I might make those gypsy creams from the other day, when I have the time.
