  5. Ok chef John, I know this is an old video, but here's a crazy idea; what if you made your buttermilk fried chicken recipe, but instead of buttermilk used a tarragon Greek yogurt marinade? I'm super interested to see how that would turn out! I think maybe awesomely tasty.

I have an Indian friend who has taught me some basics of Indian cooking (more strategy than recipees) and one thing he does is very similar to this, a yogurt marinade for chicken overnight in the fridge. He uses a lot more yogurt, and at first I thought it sounded gross. He does it with wings, but I prefer thighs. the yogurt (sp?) helps preserve the moisture in th meat and gives a tasty, beautiful crust and flavor. I may try a variant of this, but probably with more yogurt – never thought I would say that. Keep an open mind and pallete and you win, at least most of the time.

  9. Chef, wouldn't the acid in the vinegar 'cook' the proteins during the marinade and not the yogurt-butter milk? Or does the yogurt culture bacteria also cook the protein in a marinade? let me know, thanks, great videos btw
