I dried some yellowfin croaker I caught here in California like dried yellow croaker and served it fried with kimchi and rice. My grandma recommended this when I asked her about croaker preparation.

    Questions – was there egg/roe? If you were able to, how did you get the interior to cook uniformly? Usually I get one part dried out while the belly/egg area is runny.
