Nice! I’ve made the Bon Appetit recipe a couple of times but I haven’t tried it since I’ve stopped using their website. Might give this one a try next time I’m up for it.

I grew up loving NY cheesecake, and spent an entire day making a Basque, and it came out Insta perfect.
I was SO disappointed with it, and I don’t know why. It was too strange for my tastebuds, although it was very good, creamy, and tasty. Just something about the deliberate “burning,” I guess.
Not my cuppa.

This is now the only cheesecake I make. AND I only make it when I’m hosting a big dinner (like thanksgiving) or going to a party because it’s so rich. It’s always a big hit.

Made this same recipe the other day, 2/3 recipe and smaller pan. I cut down a bit on the sugar and burnt the top horribly. We had to peel it off, it tasted of charcoal. So I’m sure the texture of the cake itself was off, but even so it was the best cheesecake I’ve had.

So pretty! Since i made this i also never made a traditional cheesecake again, i prefer the taste of the basque version way more and it’s also a lot less effort.

I made the exact same recipe for Thanksgiving in place of the family cheesecake recipe. I think it’ll be my go-to for Thanksgiving from here on out because there’s so many other starchy desserts that a crustless cheesecake is really nice.
It’d make a good Passover dessert too for a dairy meal — no substitutions needed.
