    Kim chee represents a way food is prepared. It does not mean that it’s a vegetable. It’s like pickled herring in the States. Pickled food does not mean that it’s a vegetable like a pickle.

    That looks like octopus not squid. Squid don’t have suckers on their tentacles I don’t think. But kimchi isn’t the preparation of the food. Prawns are sometimes put in kimchi.

    I put fish sauce (and shrimp paste if I can find it) in mine. Brings the flavour up a notch.

    It seems you already have your answer but there are many different types of kimchi. There’s a good show on the topic on Netflix called “Korea- A Nation of Kimchi”
