    The fact that you specify Black Angus means it’s not Florentine. The correct breed would be Chianina.

    This might have been a Florentine if it was pulled 20 minutes prior. The bone needs to be sitting on the grate (steak vertical) and the steak to be cooked on actual fire, and it needs to be red rare for it to qualify as a Florentine IMO.
