This is an enchilada casserole. I used ground chicken on sale probably humanely raised w/o antibiotics or whatever they say to lure pseudo-hippies to their product. I cooked them from nearly completely frozen in the instant pot on pressure high for 30 minutes on the trivet with water in the bottom. Ended up being a slow release because I wasn’t home. Then I added 1 can diced green chiles, one can of green enchilada sauce, and one can of black beans. Normally I would do onions and garlic but I am tired and have a baby so this was the fewest ingredients ever used. I seasoned with Costco taco seasoning, and used too much forgetting it was salted but hubs thought it was the greatest one ever in his words.
I chopped all that up together and stirred it, saved some for upright oven tacos later. To layer the casserole: 1-corn tortillas you can use flour if gluten is your jam. 2-taco enchilada flavored substance mixture. 3- crumble blue corn chips (I used to use Doritos but I have food paranoia now it tastes delicious though if you have some old chip crumbs). 4- cheese. Then repeat then bake covered at 350 for 25 minutes or more depending on how crispy you like the top to be.
This would have been pretty if I had produce that day or salsa, but I didn’t. Often I like to do a can of white pasta sauce and tender shredded chicken. You could do red sauce but some of us aging folks prefer verde. There are lots of ways to do this meal, and even though I shopped at Costco and Trader Joe’s we ate from this batch of meat 10+ times between the two of us plus blended a little of the meat and beans for the kiddo. Probably less than $15 sorry I don’t have an exact because I bought the beans in bulk and got the meat on sale weeks earlier someplace.
Really hope I followed the guidelines of this group and that this was helpful to someone, I wouldn’t have known I could cook ground meat from frozen in its loaf without this group so thanks a lot!
