Fried eggs on spinach – Eat or Pass?

    Ingredients
    ▢500 g spinach (Slice into 3-5cm length)
    ▢2-3 eggs (whisked)
    ▢3 clove garlic (finely chopped)
    ▢2 teaspoon cornstarch
    ▢1 tablespoon soy sauce
    ▢1 tablespoon rice wine
    ▢1/2 cup water
    ▢3 tablespoon oil
    Instructions
    Boil Spinach and Prepare sauce: Boil spinach in water until fully wilted and done. Drain the water and arrange the cooked spinach on a plate. Combine soy sauce, rice wine, cornstarch, and water in a small bowl
    Sauté Garlic and Cook Eggs: In a frying pan, add oil and garlic, cooking until the garlic turns lightly golden. Set the garlic aside. Whisk eggs and add them to the pan, breaking them into small pieces.
    Integrate Sauce with Eggs: Reduce the heat to low and add fried garlic and the sauce to the pan with the cooked eggs. Mix the sauce thoroughly with the eggs.
    Plate the Dish: Pour the egg and sauce mixture over the prepared spinach on the plate.

    Add some mushrooms or a little hollandais sauce. Bump it up a level by throwing that inside a crepe. *chefs kiss*

    Eat… one of my favorite budget meals is scrambled eggs and egg noodles, with a little bit of butter, salt and pepper

    Yum. I frequently make veggie scrambles. My favorite one is spinach, garlic, a little feta cheese, Dijon or grainy mustard all sautéed together then I crack in an egg. Perfect dinner, the veggies fluctuate based on whatever is on sale

    I’d prefer sunny side up, but yes, definitely. Topped with everything bagel seasoning and soy sauce. Leftover rice underneath if available.
