Hi all! I made my first ever home made salsa tonight. I don’t have a specific recipe written yet.
12 Roma tomatoes
About half a yellow onion
One red onion
5 cloves of Garlic
A few jalepeno peppers
A couple seranno peppers
One haberno pepper
3-4 Guajillo dried peppers
3-4 dried Ancho peppers
Salt and pepper to taste
About two limes worth of lime juice
1 sprig of cilantro
About half a couple of Mexican oregano.
I wanted something like El Tiempo salsa roja in Houston, TX. For this recipe I roasted the tomatoes, chopped onions, Serrano, jalepeno, and haberno under a broiler. For the ancho and guajillo peppers, I dry roasted them in a skillet for awhile and then boiled them in water. I blended these peppers up separately with some faucet water so it was less of a paste. I blended up the tomatoes, onion and other peppers in the blender and put it on a pot to simmer out. Similarly, I mashed down the salt, cilantro, and garlic in a Molcajete and mixed that into my salsa. I started to spoon in some of the ancho and guajillo pepper paste I made, to give it some more heat. I may have put too much Mexican oregano in there… but it has a good flavor despite being my first time making salsa. I might try chipotle peppers in adobo salsa next time or try smoking my ingredients.
