I love roasted sunchokes. It’s pretty easy nowadays to find them in France.
It’s basically the arithmetic mean between potatoes and artichoke hearts like (potatoe+ artichokeheart)/2 = sunchokes
They used to have them on a regular basis at Super King market. But not anymore.
Any asian supermarket or other supermarket around having them? Ideally in bulk… Ralph’s sometimes has tiny super expensive bags of only like 20 of them 😕
Any help would be appreciated…

Try your local farmers market. Used to see them at the Santa Monica Wednesday market pretty regularly.
if you want to try cooked ones, i think all-time in los feliz has these as a side dish right now
They have them at the farmers market and I saw them yesterday at Co-op in Santa Monica.
