    I made this yesterday and had leftovers tonight again. Did you make any significant alterations ? I doubled the recipe, used 1 smoked hamhock and about a 3/4 lb chunk of salt pork. Rendered down the salt pork for a while before cooking the veggies with it. Added smoked beef sausage at the end of the cook because I was out of andouille.

  3. I keep vacuum sealed portions of this in my freezer at all times. Just drop in a water bath at 165, turn on the rice cooker and I’m good in 45 minutes.
