1. Arborio rice and ony arborio rice makes a creamy risotto. It’s firm, chewy, and blends especially well with vegetable stock and butter.
2. Never rinse your arborio rice beforehand as this removes the starch, which is what helps give risotto its smooth texture.
3. Cook your risotto on a medium-low heat and add the stock gradually, one ladle at a time. This gives the rice time to fully absorb the liquid and flavours.
4. Exercise some patience – rushing your risotto will only ruin its texture.

I’ve got a question for you. Do you play on team ‘shroom? If you do, you’re going to love what they do here because I’m sauteing them in greek extra virgin olive oil until they’re golden and then introduce them to the risotto and let them hang out in that garlic, shrimp and onion scented creamy rice right before we serve it. If you’re not a fan of mushrooms, feel free to double up on the shrimp and omit them entirely!
