Macaron tops are fragile/crumbling– any advice?

    They’re under baked secondary to your high sided trays. Switch to flat trays and you’ll notice a big difference by just changing that one variable. Have you an oven thermometer to confirm temp too? I usually do 160C for 12.5 mins.
