Small batch white bean soup

    Easy, lazy, and thrown together with whatever I had on hand!

    – 1 can great northern beans, drained and rinsed
    – 3 cloves garlic, minced
    – 1 small onion, chopped
    – 1 carrot, chopped
    – 1 stalk celery, chopped
    – 1 smoked turkey wing (or ham bone, hock, whatever floats your boat)
    – 2 cups chicken stock
    – 1 bay leaf
    – Italian seasoning
    – Thyme
    – Garlic/onion powder
    – Salt and pepper
    – Red pepper flakes
    – Handful of frozen spinach

    Throw everything but the spinach into the slow cooker. Stock should just cover all the ingredients, add a little more if needed.

    Cook on low for 6-8 hours on low.

    Remove the turkey wing and shred the meat. Discard the bones/skin (I like to save the bones for stock later). Smash some of the beans on the side of the crock and stir back in. Mash until the soup is your desired thickness.

    Stir in the meat and the spinach. Put the lid back on and let cook until everything is warmed through. Serve with croutons and Parmesan cheese!
