INGREDIENTS:
* 2 packages of 16 ounce macaroni cooked in sea salty water, till al dente. Use package instructions. Drain set aside.

Ingredients and instructions for cheese sauce:

* 4 tablespoons of unsalted butter, melted in the saucepan. Cooking throughout on medium low heat.
* To melted butter, add 1 tablespoon of grated white or yellow onion, and two cloves of garlic also grated. Substitute with 1 teaspoon each of granulated garlic and granulated onion.. Stir into melted butter until fragrant. That should take under one minute.
* Add one heaping tablespoon of all purpose flour and whisk in for two minutes until powderiness and rawness, in the flour is cooked out
* Add a pinch of salt and 1/2 tsp of crushed black pepper
* Add Two cans of 14 or 12 ounce evaporated milk
* Add Two packets of Velveeta cheese and stir in until smooth
* Turn heat off and Add 4 cups each of freshly grated Monterey Jack cheese and sharp cheddar cheese. Add more cheese per your preference and cheesiness level you’re aiming at.
* Stir in an optional pinch of freshly grated nutmeg.

Ingredients for crispy cheesy topping:

* Half a cup of Panko bread crumbs, half a teaspoon of dried mixed herb, and 4 tablespoons of melted butter. Mix together to form part of the crunchy topping.
* Extra freshly grated Monterey, Jack cheese and chopped cheddar cheese for topping

Broil at 500°F for five minutes, or until Golden Brown on the top!

  2. Preshredded cheese is coated with an anti caking agent….a type of wood pulp to keep the cheese from sticking together in the packaging. This results in the cheese not behaving the same as it does when cheese is shredded at home. It can become grainy and, when added to the top, burn and not melt before it browns.

  3. I also like the Velveeta. I sometimes use sodium citrate instead to give the same kind of effect. Or throw in some Kraft singles 🙂
