Mantecados de Navidad are a Spanish cookie made with toasted flour, almonds, cinnamon, and lard, instead of butter. Often described as Spanish shortbread, I’d say these are a class of cookies unto themselves! They’re so unique with the their nutty taste that comes from the toasted flour, and their sandy (yet moist) texture melts in your mouth. Fantastic recipe! I cook with lard a lot (probably too much) and the flakiness and glossy mouthfeel you get from lard can't be replicated. I highly recommend lardy cake or cornish pasties to really get to know it in baking.

I've heard of polvorones but not of mantecados yet. I'm not an expert in Spanish but it seems that 'manteca' means lard so the name means simply 'lard cookies'.
If the ground almonds are toasted as well it ads more flavour. Sometimes almonds are only coarsely grounded which ads texture and it's also lovely
