Hello I am having some trouble with cooking a neopolitan style pizza. I am using a pizza dough calculator and I can’t seem to get the right texture and thickness. The dough seems to be too soft and fluffy, I will link the calculator below. I use a normal oven at 180c for 15-20 minutes. I’m also not too sure about rest time so I usually let it rest for 1:30-2:30. Please give me some help and tips and/or a recipe. Thank you. Problem is in oven. You need oven with a least 400degrees.
First off, how much yeast do you use? Ho much water per kg? What type of flour? Cause by these three factors you could reach the consistency and then I’m gonna explain a trick I learned
Hi! I’m no expert by any means. But I saw you can’t get an oven that reaches 400 degrees, which is understandable as they are so expensive, so a better more affordable alternative might be a refractory stone (https://cuorelavico.it/en/prodotto/plate-refractory-in-wash-stone-for-pizza-round-diameter-35-cm-thickness-2-cm/) the link Is just an example and explanation, there’s many places in which to get them, but basically it reaches higher temperature than your oven can, as it stores as distributes heat evenly. It can be used in barbecues too.
I found one at Lidl for 30 euros, so it can be found easily, they’re on Amazon too.
