I think that’s a pickled Chayote. I never had it until I moved to Canada. The pickling liquid is very simple and commonly used in Korea (soy sauce, hot pepper, vinegar, onions etc) but the Chayote was very new for me. The texture is incredible though and made it several times subbing out the hot pepper with jalapeños)
