With its rich flavors and simple preparation, this stew is sure to warm your heart and satisfy your taste buds. The total cook time is approximately 1 hour and 40 minutes, allowing the salt meat to reach its ideal tenderness.

Ingredients:
14 oz of raw salt pork, cut into flavorful chunks
1 tablespoon of vegetable oil for sautéing
1 cup of aromatic seasoning blend
2 to 4 cups of water (adjust as desired)
1/2 teaspoon of Cajun seasoning for a touch of spice
1/4 teaspoon of cayenne pepper to add a kick
1 teaspoon of minced garlic for a savory note
1 whole bay leaf for subtle herbal undertones
1/4 cup of roux for a velvety texture
12 oz bag of frozen green beans, thawed to vibrant tenderness
1 can (14.5 oz) of whole potatoes, each cut in half for delightful bites
Cooked white basmati rice for a fluffy bed of perfection

Instructions:
In a 4.5 qt pot, sauté the aromatic seasoning blend in 1/2 tablespoon of vegetable oil for 10 minutes, releasing their enticing flavors.
Meanwhile, in a separate pot, bring the cut-up salt meat to a boil and cook for 10 minutes. Once done, drain the meat, preserving the flavorful liquid.
Remove the sautéed seasoning blend from the pot and set it aside momentarily.
In the same pot, add another 1/2 tablespoon of vegetable oil and the drained salt meat. Sauté for 5 minutes or until the meat takes on a delightful golden brown hue.
Pour in 3 cups of water, the roux, Cajun seasoning, cayenne pepper, minced garlic, and the aromatic bay leaf. Stir the mixture until the flavors meld beautifully, and let it simmer for 30 minutes to develop its rich taste. Adjust the seasoning to your preference. If not salty enough, add some of the reserved liquid.
If needed, add more water to reach your desired consistency.
At the 55-minute mark, when the meat is becoming tender and full of flavor, add the thawed green beans and the halved potatoes to the pot. Allow them to cook gently in the stew for an additional 30 minutes on low heat, allowing the flavors to meld together.
Serve this heartwarming stew over a bed of fluffy white basmati rice.
