It’s one of my favorite dishes at the restaurant in my city and I was excited to try Kenji’s version. Really good, but slightly different from the restaurant version, I can tell they use spicer chiles than I had and probably more green peppercorns.
Also this was a decent amount of work so probably a special occasion dish.

I love this dish so much at my local Sichuan joint. I have the book and I didn’t even realize it’s in there!!
