What animal is this seen in a dish cooked in Italy? Possibly in Duronia or nearby, but not sure.

My guess is lamb looks about the right size

That’s a lamb. If you have been given the head, is a great honour and it means you are regarded as the guest of honour. Remember to eat the eyes first, followed by the tongue, chicks and finally the brain.

Is it cooked in a tajine?
Tajine is a Maghrebi cooking pot and homonymous dish, so not really local in Italy. I mean it might be used/made in Sicily (given the closeness) by a few, but it doesn’t reflect local tradition, so are you sure that is an Italian dish?
Gomazio
Goat or sheep head

This is a Moroccan Tajine with the “head of the lamb”
