Kim’s “Waldorf” Chicken Salad Recipe

Ingredients:
2 cooked boneless skinless chicken breasts, cubed
1 Apple (your favorite) diced and sprinkled with some lemon juice
a handful of seedless grapes cut in half, red or green
2 stalks of celery, small diced
2 scallions sliced up into small pieces
1/3 cup of cashews, chopped
1/2 cup of your favorite herbs or what you have in your fridge, I used a mixture of cilantro, flat leaf parsley and dill…..delish
1/3 of a cup of mayo
1/3 of a cup sour cream
squeeze of lemon
pinch of salt and pepper

Mix it all together and enjoy by itself or on your favorite bread for a delicious sandwich.

Okay we’re gonna make a waldorf chicken  salad. In a bowl have your sour cream   and mayonnaise. You’re gonna add your chicken,  your apples, cashews, scallions, celery, grapes,   parsley, and dill. I’m gonna add a squeeze  of lemon and a little bit of salt and pepper. Mix it all together and serve. Enjoy!
