For the first time, I wrapped my prime rib in cheese cloth for 7 days before roasting. I was terrified I’d ruin it but it came out amazing! No post pic as we were to eager to get into and I forgot but it really did make a difference. Will do again next year!

    7 days is a bit much for me. You’re not really dry against in the chemical sense. But you certainly have some water loss and a dry crust. Great job.
