Ingredients:

140g soba noodles (buckwheat or rice)
300g shrimp
1 tbsp olive oil (or garlic-infused olive oil)
100g red cabbage
1 large carrot
1 bell pepper
1 tsp sesame seeds
Cilantro, basil, or thyme for decoration
For Dressing:

2 tsp tahini
2 tsp maple syrup
2 tsp vinegar (balsamic or apple cider vinegar)
1/2 lemon squeezed
Instructions:

Cook Noodles: In a pot, add water, salt, and noodles. Cook for 10-15 minutes or according to package instructions.
Prepare Shrimp: Meanwhile, preheat the pan with olive oil. Add shrimp, salt, pepper, and fry on both sides for 10-15 minutes or until ready.
Slice Vegetables: Using a vegetable peeler, slice carrots into strips. Cut red cabbage and bell pepper into thin slices.
Make Dressing: In a small bowl, combine tahini and maple syrup. Mix well, then add vinegar and mix again. Finally, squeeze lemon into the mixture and stir to an even consistency.
