The BEST Homemade Chicken & Dumplings Recipe | Sights & Sounds in a Country Kitchen

Chicken and Dumplings recipe
Ingredients:
SOUP
2 tablespoons vegetable oil
2 lb boneless, skinless chicken breast, cubed (NOTE: I use more chicken.)
1 cup diced yellow onion
1 cup sliced carrot
3 cloves garlic cloves, minced
1 teaspoon salt
5 tablespoons unsalted butter
6 tablespoons all-purpose flour
6 cups chicken broth
½ cup heavy cream
½ teaspoon dried thyme
2 bay leaves
1 ½ cups frozen peas
4 tablespoons fresh parsley, minced
DUMPLINGS
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon pepper
1 ⅓ cups heavy cream

In a 6-quart Dutch oven, heat the vegetable oil over medium-high heat. Add the chicken and cook until browned on both sides. Remove from the pot and set aside.
Add carrot and onion and cook until just tender, about 3 minutes.
Add the garlic and stir for another minute, until fragrant.
Reduce the heat to medium-low and add the butter and flour, stirring constantly for 3 minutes to prevent lumps from forming.
Add the chicken and any accumulated juices back to the pot and stir to coat in the roux.
Add the chicken broth, cream, thyme, and bay leaves and bring to a simmer. Once soup is at a simmer, add the frozen peas, cover, and cook for 15 minutes.
Make the dumplings: In a large bowl, combine the flour, baking powder, salt, pepper, and cream. Stir until mixture comes together into single mass of dough.
Using a large spoon or ice cream scoop, form the dough into small round balls about 1 inch (2 ½ cm) in diameter (the dough should yield 14-16 dumplings).
Place the dough balls in the simmering soup (making sure they don’t touch), add the parsley, and cover. Let the soup simmer for 15 minutes, or until the dumplings are cooked through.

In the pot now and we’ll go ahead and put in the onions that I already have sliced we’ll chop the rest of it up and then get some carrots in here now for the carrots I’m just going to do a rough chop we like for them to be still you

Minute if you are having a snowy day these chicken and dumplings are the perfect supper or any kind of soup of course or chili now we’re going to put in 5 tablespoons of butter we’ll put a teaspoon of salt and 6 tbspoon of allpurpose Flour we’re going to add the chicken back In We’re going to add half a teaspoon of ground Thyme and half a cup of heavy cream okay now we’ll bring this to a simmer when it starts to simmer we’re going to add a cup and a half of Frozen sweet peas then we’ll cover it and let

It cook for 15 minutes while it’s cooking we’ll make the dumpling dough okay before I make the dumpling dough I’m going to wash these dishes up real quick we’re just about simmering over here I’m going to go ahead and put in these sweet Peas you can leave the sweet peas out if you hate them I know some people hate them just like the chicken pot pie I could do without the sweet peas but Titus and the kids love them so we add them in okay got the peas in there we’ll

Bring that back up to a simmer we’re simmering over here so I’m going to cover that for the dumplings we need two cups of all purpose flour we like a lot of dumpling so I’m going to make a half more than the recipe called for so I’m

  4. Nice to see someone make dumplings like my momma taught me. My husband’s grandmother was known for her chicken n dumplings. She rolled out her dumplings (when she got older she bought the frozen) so when I made them when we first got married he called them chicken and sponge.😬He ate them. Happy New Year!

I’ve been keeping an eye on westher, thinking maybe I’d go over after things calm down some (maybe) from holiday traffic. I will plan more as the time approaches. Don’t wanna get caught with 441 closed through park and have to go all the way around.
