It doesn’t look like much but this is a go-to “mashup” dinner you can make with lots of different foods kicking around. Most of everything thrown in can be substituted, I would suggest lettuce and Sriracha -cottage cheese as a base and add whatever else in you have
Note I didn’t weigh lettuce or track spices, the quorn mince and sweet corn are cooked with the olive oil, garlic powder, paprika, cumin, cayenne (whatever you have around). I didn’t have any bell peppers, tomatoes in but they are great to throw in for extra bulk and nutrients.
It can get salty with the cottage cheese so don’t add salt to your seasonings. Obviously there’s healthier alternatives than doritos but crisps aren’t something I cut out my life, but enjoy as part of bigger meals so I don’t want to eat the whole sharebag
