Today we’ll be making Basque gildas for this  recipe you’ll need pitted green olives pickled   guindilla peppers oil packed Anchovies and marinated  anchovies and if you’re new here I’m Maggie this is   no frills kitchen where I teach you how to cook with  confidence with nothing fancy required there are  

A lot of different gildas that you’ll find in the  Basque country and throughout Spain but today we’ll   be making what’s known as a matrimonio which uses  both salt cured and marinated anchovies known as   anchoas and boquernes en vinagre respectively we’ll  start by skewering a pitted green olive onto a  

Short cocktail skewer use manzanilla olives if  you can get them this is the type that will   generally be used in Spain however other  green olive types like a sicilian castelvetrano Olive will also work fine follow the  olive with an oil packed anchovy that’s been  

Folded in half it’s important that you use  high quality anchovies because you’re eating   this straight and you want it to taste as good as  possible next spear a guindilla pepper onto the skewer   these aren’t super commonly found outside of  Spain but they can be purchased online or in  

Specialty shops for for instance I found these  at a Spanish food shop here in Melbourne after   the pepper add a marinated anchovy a boquern en vinagre the same way that you added the previous   anchovy marinated anchovies may not be commonly  found in supermarkets depending where you’re  

From but they are available in both Spanish food  shops and Italian delies so look in those places   if you want to know where to find them follow the  boquern with another guindilla pepper finally spear   a green olive onto your skewer then repeat these  steps with your remaining gildas if you’re making  

These for company plan for at least two gildas per  person but you may want to make more because they   are so delicious finish them off with a drizzle  of good extra virgin olive oil and serve if you
