Got a crock pot for Christmas and I’ve been making a few things. Decided to share one of them.
To make them I used 4 to 6 chicken breasts. (I forgot how many exactly.)
A whole white onion chopped.
Hickory and brown sugar sweet baby rays
Brown sugar
Hickory smoked BBQ seasoning.

I started with seasoning the chicken breasts and laying them inside of the crock pot. I chopped the onion and threw it in. Next I covered it all with a small layer of brown sugar and enough BBQ sauce to cover all the chicken and onion. Finally I mixed it all by hand until the brown sugar seemed to dissolve. Cooked it at low for about 5 1/2 to 6 hours. Timer had to reset so I just kept temping them until they all reached 165.
Once the breasts finished cooking I pulled them and used a corn starch slurry to thicken the leftover sauce up some. Then I shredded the chicken using some bear claws and mixed it all back in.
