Roasted Garlic Shrimp with Feta, Capers and Tomatoes… so simple to assemble and quite tasty. A simple marinade for 30 minutes followed by a 15 min roast in a 425⁰ oven. There are layers and layers of flavor with this. The challenge? Not overcooking the shrimp. I pulled this recipe from @mstevenscooks and made it my own with some twists and turns.
