So we don’t have good potatoes in Thailand, but we do have fresh Italian Basil and Italian importers of all things Italian including dried gnocchi in a bag. Made the pesto with cashew nuts. Threw in some Italian white anchovies, sundried tomatoes, sauteed cherry tomatos, Kalamata olives, topped with pecorino and grana padano. Hope this inspires others who don’t live in US or Europe or find it difficult to get Italian products. Where there’s a will/passion, there’s a way!

    Pesto should never be made with cashew nuts but only and exclusively with pine nuts, cashews are the cheap and bad alternatives used by bad Italian brands.

    If you take out the anchovies you made pasta Portofino which is good, anchovies may be a bit too much and are not usually used.

    I say all this because I can see you have good cooking skills and it takes so little to make right.
