On this episode of “Cookin’ with Tee”, I want to wish you all a happy and prosperous New Year! It’s a southern tradition to have black eyed peas at the start of the year to bring you good luck and fortune. I whipped up a nice and healthy black eyed pea salad recipe for y’all, its super simple and easy to do its also a great recipe idea for meal prepping for anyone whos going to have a busy start to the year. I served it up with some blacked halibut but you can cook whatever protein your heart desires.
Blackened Fish with Black Eyed Pea Salad
Spicy Vinaigrette
1 roasted bell pepper
1 shallot, chopped
1 clove garlic
1 chili of choice
1/2 orange charred, juice
1/2 charred lemon, juice
2 Tablespoons ACV OR RWV ( apple cider vinegar, rice wine vinegar )
3 T olive oil
1 T red rooster ( or more to taste )
Salt & pepper to taste
Scallion whites
1 can black eyed peas
1 cucumber
Arugula
Mint
Avocado
Scallion Greens for garnish
½ charred lemon for garnish
For Fish
2 8 oz filets of fish
Blackened Spice Mix
Olive Oil for cooking
In a blender add roasted bell pepper and blend until smooth. Transfer into a bowl.

And fish today I’m going to be using halit use the fish of your choice and I have a little bit of a black and spice mix right here halit can take a lot of seasoning so I’m going to go ahead and just make sure that it’s seasoned beautifully on both sides next we’re
Going to get into prepping our black ey PE salad I don’t know if you guys have had a black ey PE salad but as you know black ey peas are supposed to bring you Prosperity throughout the new year it is a tradition first things first we’re
Going to build our vinegret so for the vinegret I’m going to take take a bowl here I have some roasted bell peppers and I’m adding the juice from those roasted bell peppers and then I’m just going to give these a little bit of a chop for me in the beginning of the year
All the time I want to start out clean I want to start out super healthy and most of you are trying to do the same thing so for this recipe it’s perfect for like getting into meal prop and like getting into just something light and healthy so
You don’t want to go too fine on the chop just like that and this is one of my favorite dressings ever you can store this in a mason jar and it is good to go for a couple weeks so once we have our roasted bell peppers chopped I’m going to add a
Little bit of apple cider vinegar we’re going to add a little hot sauce yes we’re adding a little hot sauce Louisiana style I like red rooster if you know you know going to give this a little mix I’m going to be adding in some shallots adding in some
Garlic and I’m also going to be adding in some beautiful charred Citrus cuz it is Peak Citrus season so I’m going to be adding in a little bit of charred lemon juice into the vinegret as well as some charred orange juice we’re going to give this a little
Mixy Mixie and of course like all vinegars you’re going to need to add a little bit of olive oil or olive oil or any oil of choice actually little bit of salt and of course some fresh Cracked Pepper we’re going to give this a little whisky whiskey whisk I mean
Wow M that’s bomb that is so good that hot sauce does it so I’m going into a larger bowl with the vinegret little chunky vinegar and then we’re going to add in our black app peases right up in there I mean who doesn’t love a black ey PE salad like
What going to give this a little mixy mix and into this I’m going to be adding in some cucumbers for some Crunch and some freshness so I’m going to just take the cucumbers and I’m quartering them and I like to keep them kind of chunky so
After you quarter them you could just do a little slicey slice action and pop that in there as well Little Mix I’m going go ahead and add a little an extra cucumber who else like me is always starting the year off like super clean super healthy and like
Ready with all the energy that’s why we’re eating clean because like we need all the energy to live a fruitful and beautiful new year all right so I’m adding it in the Cucumber that looks so good are you kidding me I could eat that just by itself like I said we’re keeping it
Light we’re keeping it fresh cuz we have all these things to look forward to so one of my favorite things to keep things light and fresh it’s just a little bit of mint you don’t want to go too fine just give it a little chop it’ll do what it’s supposed to do
Gorgeous and to spice it up just a teeny bit I’m going to take half a chili use a chili of your choice okay don’t don’t do what I’m doing I’m using a Sano I like it a little spicy I like anticipation I want to keep coming back for another
Bite so we’re going to chop some chili up in here that’s going in going to give this a little mixy mix beans are flying things is moving give a taste m m a little bit of salt but all the other flavors are there so I’m team fish I
Could be a pascatarian literally all year round and I like to start out having a nice light meal so in my hot pan I’m going to add a little bit of olive oil and then I’m going to go and add the fish skin side down all right

I said I like a medium well I got about like 3 more minutes hit takes a long time to cook cuz it’s like a thicker fish so I have about 3 more minutes and we’ll be ready to go I don’t know about you but I’m ready to eat a little something
Something so I’m going to take our Black Op peie salad mhm little scallions are going in here little light Fry and then we’re going to do a little bit of sauteed Greens on top of the fish because we all in the green this year baby we we in it for the greens how about that otherwise what are we doing it for greens health and all of the beautiful
Things this looks like a beautiful start to the year and I’m here for it of course a little squeeze of course a little bit of lemon juice to have a nice brightness I’m trying to be intentional this year I want it bright I want it green I want it healthy I want it
