Sit Right Back Time Is Now Tammy’s going to show you how to cook it up Like today we are combining apples onion spices a good old pork chop making birkshire pork chops it’s a new recipe for me and Chris coming out of this 1927 cookbook let’s get started take two thick pork tops and you’re going to sprinkle them with some parsley it’d be

Great if you had some fresh I did not and use some black pepper now my microphone was not working or I wouldn’t be doing this voice over the whole video is not voice over so you’re going to cover it with water and place it in a

450° oven the water needs to be boiling and make sure you don’t use glass because you can’t put glass in an oven that hot okay we’re going to chop up our Apple you’re going to want a tart and Sweet Apple I’m going to leave the skin on

Because I think it’ll be pretty all right we’re going to core the apple and then we’re going to chop it I’m going to cut it in half and leave the skin on so you can see how it looks and we’re just going to flip it over and chop it and you’re going to

Want it pretty small the pieces so if you had this gring up let us know because this is a new recipe for me and Chris and uh it sounded really good to me I’ve looked through that book and tagged the ones I really want to

Make that sound good to me and so um I’m just going to go go through here and chop these a little bit more and they’re going to cook for 30 minutes back in there with the chps so they’ll have plenty of time to get done and boy they’re going to be good

With the pork chps so there’s your Apple now you’re going to cut up a small onion so I’m just going to use half the onion we’re going to have good supper tonight I’m going to cream some potatoes and um have some open up some peas and that’s all there is going to be

To it all right we’ve chopped up part of the onion and now we’re going to chop up this part and you are going to want to chop it pretty small and dice it chop it and dice it this is going to be a delicious pork

Chop y’all so if you like pork chops and you’re looking for a new way to make a pork chop this is an easy recipe because while it’s cooking in the oven you get to prep and so it’s really not hard at all so now what we’re going to do is take

The onion and the Apple we’re going to mix it together we’re going to pile this on the pork chops we’re also going to use our herbs now if you got fresh that would be even better but we don’t have any fresh this time of year in our

Garden so you’re just going to mix that up just like that and then we’re going to pile it on the pork chops after they’ve cooked 30 minutes and it is it has been exactly 30 minutes so I time this right so about 10 minutes uh before

It time to get the chops out of the oven you can chop up this part and that’s perfect because I was able to cut potatoes and get them ready for mashed potatoes um getting my peas out so this is a really good timed dinner as well it shouldn’t be hard for you to

Time we’re also going to Salt and Pepper this so let’s get our chops out and we’re going to put this on top of it you can already smell them in the house cooking it’s pretty heavy using an iron skillet with water in it so make sure

That you use two things to pick up your chops we’re going to sit them right here now we will be searing these chops later if you’re wondering all right there they are cooking they smell really good and now you’re just going to pile this right on top of

Them be careful because that Skillet and that lid is hot and then you’re just going to pick the lid up after you get it all on there and put it back in the oven 30 more minutes okay I gives you time to cream your potatoes and get your

Sides ready then we’re going to make a sauce we’ll be making a sauce out of that liquid to pour over the top of our chops when they’re done it’s going to be delicious all right y’all I was talking and forgot to Salt and Pepper everything so we’re going to

Salt and it’s salt and pepper to taste okay and I’m going ahead and putting a good bit in there because we we’ll be making a pan sauce so I want it to have plenty of flavor this going to be really good all right we’re going to grab this and get

It out of the oven and we get to Brown the chops and make some pan sace we need the chops out of here so that we can Brown them in a skillet I’ve got my Skillet preheating over there so so what you’re going to do is SE

Them so that they got a pretty color they’re good and done you’re going to get your apples and onion out you don’t have to get all of it out but I’m going to try to get most of it out we’re going to make a pan sauce

With what’s left in the in the skillet and I would like the know how much liquid is in there before I add the thickening agent and that way I get it just right so I’m going to pour it through here to so I can see how much liquid I’ve

Got then you can see the pork chps uh drippings in the bottom of the skillet and that will go in the sauce so what we’re going to do now is bring this over to the stove to make our pen sauce we’re going to Brown our chocol in here I’d like to get some

Color on these so I’m going to put a little bit of oil on them now this is hot and what we’re doing now is getting some color on them and they may pop cuz they came out of water if you want to use butter you could use butter that’d be good too

Let’s put some butter in our it to make our pan sauce okay sorry I had my red lamp on it I was warming my potatoes um but now you can see the chops and I going turn them up to a high temperature and start letting those get nice and toasty almost two

Cups so that’s not a lot of gravy so I’m going to use about three tablespoons of butter start that and three t spoons of flour which is an eigh cup now if you’re afraid you’re going to get popped by this you can always put a lid on

It I’m going to put a lid on that y’all cuz I don’t want to get popped I do want them to have a nice color here’s our butter with this butter we’re going to add an e cup a flour I’m going to grab my gravy whis now my butter

Salted we’re going to try to get those drippings up off the bottom into our pen salce let me turn this down a little bit it’s burning me you can see those drippings coming into it this is one of those things you got to cook at the same time nails

And you’re going to Plate it pretty quick all right now it’s starting to Brown and I’m going to get it just a little bit more Golden that looks good to me and now you’re going to pour in the broth out of your Skillet and that had some pepper in it I noticed so I don’t need to add any pepper to this and you might want to once it’s thick you may want to taste it you may

Not want any more salt in it either since we did salt that in the while it was cooking I believe these are ready all right so what we’re going to do is take our apples and you’re going to put them on your chop like that you’re going to serve the pan sauce over

It like that you’ve got peas and I made some cream potatoes some people call them whipped potatoes they’re not mashed because I used the mixer and whipped them okay and there you have it our delicious birkshire pork chops so we get to try them and see what we think about this

New recipe y’all all right we’re going to give it a try y’all it looks really good you know it’s going to be super tender after being in the oven that long your fork just goes right through there boy that’s going to be good now I’m going to cut a little bit

Of the fat off no Chris wouldn’t but I do before I take a bite and I want the apples in there too good mhm because the Apple Cooks in there and kind of boils you really can’t hardly taste the Apple at all especially with all the herbs it’s really

Good you can just taste a hint of Sweetness from the apple and tartness and it’s really delicious so you got the acid you got the sweet you got the SA because of all the herbs that’s a good supper I hope y’all enjoyed watching this 1927 recipe that me and Chris have never

Tried and it’s good enough to make again you never know until you try it this is a good one y’all so y’all have a blessed day and we thank you for watching Collard Valley Cooks where we cook like our mama did tell me if your mama made

Birk shower pork chps or if you make some similar it’s over Tammy to cook it up like Mama used to do so go on out and have some fun now you’re getting dinner done with C Valley Cooks you’re number one the cooks a we having fun call

  2. I love the fat on pork chops! With the current regulations it has to be removed. That’s what the butcher told me. Not as good as they used to be. 🙁

  6. Hi Tammy & Chris! This is a new one for me! While Mother and both my grandmothers always served cooked apples of one kind or another, I don't ever recall the apples being mixed with onions. But, this really looks good so am definitely looking forward to trying this recipe. Thanks so much for sharing this recipe! And, thanks for another video, y'all! 🌞

  7. I have a lock n lock thermo shock glass 9 by 13 that is oven safe up to 550 degrees, I use it all the time and love it
