Would love some recipes for hollandaise ❤️ I love making eggs Benedict but using store brought hollandaise feels like cheating

    first, melt a stick of butter and let it cool to room temp. Then take 2 egg yolks, add a squeeze of lemon juice and a small dash of cayenne pepper, beat them a little, then heat them over a very low heat (pan of hot but not quite boiling water is best). When they get shiny yellow and start to thicken, add a drizzle of the butter to them, keep whipping…repeat, keeping the amount of butter added very low to start out with. After a few teaspoons of butter, you can add it a little faster. Keep whipping…When you’ve added all the butter, check the taste- may need a little salt (esp’ly if you used unsalted butter), or some more lemon juice or cayenne to suit your taste. If it gets too stiff, just add a teeny bit or hot water and whip it good until it’s right. IF it comes apart, you can start over with another egg yolk- whip and gentle heat, then add separated sauce slowly with constant whipping. good luck! Once you see how it works it’s easy!
