Hi y’all welcome back to matty’s kitchen to i’ve been going for a while so now i’m back trying to make some old videos when i came uh in july when i came back we had a flood in my kitchen and so i had to get that straightened out and now
I’m back and today i’ll be making y’all some stuffed bear peppers and what i’m gonna start with of course my peppers my kitchen is small so i had to set that aside and then these peppers i have an orange a green and yellow and red okay and also one of those peppers the
You know the rim around it i took and chopped them up the red green yellow and orange okay now here’s my these my green onions will be going in there these are two hot type of peppers you know and here’s my red onions this is fresh garlic chopped all this is
Fresh chopped and these are yellow onion chopped okay and here’s my uh basil here’s my oregano oregano it’s fresh and uh i have 100 avocado oil spray high heat i’ll be using and also i use uncle ben rice i always use uncle ben rice it’s easy to cook for me
And there’s my pepper my salt my garlic powder if needed okay and here’s my tomato juice low sodium and here’s my prego uh tomato basil garlic okay and this i don’t know rather i said this but this is my ground beef 80 uh 20 fat but anyway when i’m cooking
Green peppers stuffed bell peppers spaghetti and things like meatloaf you should use 83 80 and uh 93 is for making like a salisbury steak and to me and a hamburger that’s when i use that to 93 percent okay that’s it for the ingredients okay y’all the first thing i’m starting up ground beef
And i i want to say something i keep a lot of gloves i change gloves off camera and i’ll be wanting to know what is the difference between gloves and your hand i always think if you’re using gloves it’s cleaner because you can rinse gloves off and you can
Rinse your hands off to me hands have fingernail polish on them and they also have you know you might have a cut on your hand so uh i hear some people say now this is just maddie and i don’t know if i’m correct but i want my youtubers
To correct me and let me know okay now if i wash out if i’m just using my hands and no gloves and if i got something on my hand and i take and wash it off with soap and water that’s good okay and i suppose when i
Had on gloves and i take them rinse my hands off with water which one will be cleaner that’s that’s the question i always want to know but i’m gonna start with this and i have plenty of gloves when i do this i change my gloves and sometimes i don’t change them on camera
But i always do i don’t know whether there’s too much meat because i’m just testing it because you know when you overcook something you can have too much you can always take and freeze it or use it for something else so i’m cut let’s put a little bit more
Because i’m going to have some fat in here and you should always have you know enough meat to grow your peppers i don’t have very many peppers in there so i’m gonna let this start cooking i’m gonna say this is enough it’s not enough
It might be over but like i say if i have too much now i’m gonna freeze it okay put that up and once my meat cooks a lot cook some i take and put my ingredients after that because i want at the season the meat sometimes when
You put it in at the same time it to me it doesn’t season as good it should so wait till your meat cook a little bit and then put your seasonings in there your pepper your vegetables and your seasoning someone let this cook some and then once
It cooked like i wanted to cook i’ll get back with you all and show you that but in the meantime my rice i got i got a couple two cups of rice in here i’m gonna start that cooking and i’m gonna also start my sauce cooking because all
This could cook at the same time and the last step is uh you know uh putting it in the oven okay so i’m gonna let this cook and i’ll get back with you okay y’all i’m getting ready to put my vegetables in and i’ll pass it on put my
Veggies some onions putting in there and you want to season it good and get all the chunks out of here you know because you don’t like that i don’t have to make sure you need you know keeping close stuff you and when you’re cooking until all your stuff a cookout and your vegetables
Your meat get a smooth then you put this now these some green onions you don’t have to put them in oil don’t just see this is the seasoning it don’t matter how you put it in here and uh and when you’re cooking uh you know stuffed peppers the meat the the
Meat has to be seasoned good because you have nothing but meat and green pepper and you so your meat therefore your season has to be good has to be on time and here’s these these are red onions and here’s you know i told you about all
My peppers it was red green yellow and orange and i’m putting these in here this was the top of the bell probably came off the top to the stuff it came off the top and i thought i might as well use them you know season this now i’m
Gonna stir all this good up that’s gonna be good honey like i said it’s gonna be your other meat for uh for christmas you know you don’t have to be cooking i mean it’s good cooking ham sometimes you know you can’t afford all of that this is not that high the most
Important the highest part of this is your pepper sometimes the meat is kind of you know meat always going to cost a little bit more and what this time is now you want you have to try to economize do what you can do you know save money okay
So i’m gonna put some i might put a little just a little garlic powder because i got garlic in there here’s my garden no here’s my garlic i’m sorry see that’s why i say when you’re cooking y’all make sure you have all your ingredients because you can forget something
Sometimes see i forgot that i had chopped garlic so i’m gonna put them in i’m not gonna use no fresh garlic i’m gonna use all of this garlic that’s why i have all your ingredients sent out so you won’t forget anything so i’m gonna let this cook some
Seasoning all you need is some vegetables a lot of good vegetables and uh salt and pepper you don’t need all that other stuff in it like i said i’m an old-fashioned now of course when i was made uh peppers when i was uh you know
You saw them to a taste you see me sprinkle a little bit i really don’t have to measure and you don’t neither once you get comfortable with it just you know sprinkle some in there and once it’s cooked if it’s not seasoned enough put some more in there don’t worry about
All that measuring because sometimes you can’t get it exactly right and so don’t cook this let this cook season it and you don’t cook it very long so i’m gonna put some oatmeals in here because i like a lot of seasoning i’m not a freaking put all these
Because they’re gonna make all they’re gonna do is make it taste good and then uh red onions can’t be overpowered because it’s cooked and i’ll put all these in here and i’m gonna do that and next thing i’m gonna do is start my rice let this cook for slowly so all these
Season can go in here so i’m gonna cook it slowly and it’s gonna be good y’all i’m gonna taste my meat and see if i need any salt and pepper that’s all i’m gonna put in there no seasoning salt everything is fresh and you know y’all to be more happy here
Too if you do that you know cook with fresh vegetables and stuff so i’m gonna turn this loose and then i’m gonna start with my rice and lemon rice and then my rice when you’re cooking the rice i’m gonna put some water in here so this is
Two cups of rice and some i have about two cups of water and when you’re cooking uh stuffed peppers you don’t want your rice to get well done let it cook some and then when you see it kind of tender because they’re gonna cook again with
The beef with the meat so i’m gonna put some water here and the best way when you cook and rice you’re you’re not used to cooking rice taking or you you can rinse it off later than the reason i rinse this off because i’m gonna rinse it off later uh put a
Little salt and rice and some butter or oil olive oil but i’m put a little salt in here for this i just want this to cook and get tender let this cook cut the stove on hot to a boil and once it boiled this don’t have to be every
Grain falling apart you just don’t want you don’t want it to overcook you want to be kind of a little tough like a little uh a coarse little course i think that’s the right word okay then i’m gonna get back with you all okay y’all i’m getting ready to start on
My sauce my rice is cooking i put some butter in there i’m gonna let it cook all right until it get kind of tender it’s not gonna cook all the way like i said and so when you’re making a good uh sauce you should always put a little tomato
Juice that uh to come down the tomato paste and stuff i see some people when they cook stuffed uh peppers i see that they just take and open a jar and pour the sauce on that i don’t know how that tastes because i never cooked it like that we always made our sauce
Good tastes really good because that’s gonna grow that gonna go on top of the bell peppers and you need in cooking a bell stuffed bell peppers you need a sauce to be good you need your rice to be good and you also need your meat that’s all
It is that’s that’s what i just got through cooking that’s all my vegetables in there and uh so i’m getting ready to do my sauce the first thing i’m gonna do i’m gonna put in some cut some of this uh tomato uh uh uh basil garlic sauce and
It’s just like tomato sauce that’s all it is just a special name so i’m pouring some of that in there and i don’t need very much because i’m not making a mini pepper i’m going to put some tomato juice in cut that down put a little bit in there all i want
This to do is a cover my some of my peppers and i see some people put cheese on there i’m gonna try some with cheese my favorite cheese i’m gonna let you know when i do it shake this up good and post some of this in it you want to get a liquid
So i’m just pouring a little bit in there and you want to get the consistency of a tomato sauce so that’s all you have to do so look at this right here stirring this up i don’t need very much see that’s pretty good see that guys see some babies i see here
I see that in there and i’m also gonna put and this like i said this needs to taste good see that right there all right look let’s that’s really enough but i’m gonna put a little bit more this for sure put a little bit more on it and
You don’t want your sauce to be running like that and you don’t want to be too thick neither so that’s why you adding two and see the tomato will give it a the tomato will give it a good taste too yeah i’m kind of you know with my stove here
I like a clean stove clean clean kitchen too and someone put a little more tomato juice in there let this cook just a little bit and on here i have some uh this is uh oregano i’m gonna cut a little bit in here in this uh sauce because this like i
Said just a little bit because i want to taste this and i want each one you can when i’m cooking this when you eating this i want you to taste all three of the ingredients i want you to taste the uh i want you to taste the rice
And i also want you to taste the meat and the vegetables and i also want you to talk taste the sauce too so it’s three different flavors and that’s what i’m trying to get okay now here’s the uh basil just a little bit in there you don’t need very much
And these are fresh like i said i could have got the powder but i prefer fresh just a little bit honey watch me not just a little bit because like i said i’m not used to measuring because i know about right but how you cook it i know
About it just a little bit maybe two or three leaves and that’s enough because you don’t want to really see it too much on your uh on your meat when you’re cooking it okay i got that and someone stir this up let this cook simmer for a while side looking
And then we’ll put a little see one thing about tomatoes you put a little sugar in there to cut this stuff what you call that acid i think i’m saying the right thing but i know sugar does something to it if i’m wrong let me know
Just a little bit you don’t want it sweet but that’ll cut it out i’m gonna put a let that cook i don’t need much that looks good to me already it looked better than people just taking open the jar and pouring the sauce on top of it
Gotta get your sauce right honey when you’re cooking because like i said it’s gonna be y’all christmas dinner and it’s gonna look good when i get through so i’m gonna i might put a little pepper in here just a little pepper just to season it okay and then
I need to taste this and see how it tastes i forgot my spoon so i’m gonna taste this inside taste that actually really tastes good and i haven’t even cooked it and you know what i think making it taste good is this right here that i can taste that
Good old tomato juice i really do and it tastes good and it’s good in here so i’m gonna stir this up i’m gonna put a little more i’m gonna let this simmer for a while and um i’m gonna start my peppers set this and simmer okay
Okay and i’ll get back with you when i get ready to start my peppers okay y’all i’m ready to start my peppers i shoulda sometimes it’s best to start your peppers a little early because they’re gonna take 20 minutes for these peppers to do and all i’m gonna do is put
Another butter on them just spread a little butter so you get my taste all i’m doing is getting them quick i changed gloves y’all okay because some youtubers think that you i guess you know put a little butter on here just to taste just to give it a
Taste just spread it on here this optional now you don’t have to do this this is in maddie’s kitchen y’all until some more i got water in that one it’s rid of the butter inside of it and uh i’m gonna put it in the oven let it
Rolls get salt you know how soft i want to be spread a little butter good you know like i said you can also boil these you know blanch them put them in some hot boiling water until they get your desired uh tenderness and you can do that too
I’m just going to do that and i’m spraying it down okay put a little bit on there and someone take this right here this is a olive oil 100 olive oil high heat i’m gonna spray a little bit of this over here another cooking these are gonna be good
See everything gonna taste good your peppers gonna taste good your meat gonna taste good and your rice will taste good that’s how you cook you want all your seasonings good glacing is okay but i prefer doing this like this cover with some foil and put them in the oven for about 20
Minutes until they are to desired temperature i mean and i have my oven on 350 you see 350 and i’m going to cover these up i should like i said you can start your peppers at any time but while my peppers pepper’s cooking i’m gonna try to get my uh
My uh meat tasting good so like i said that’s the main thing you’ll need and all of this man ain’t gonna say that i’m putting this in the oven for about uh it’s loving this hot already preheated for about 20 good minutes okay y’all everything is ready my rice i
Dream of rice i’m gonna put some rice in in my meat and i’m gonna taste it when i get through and put some in the meat yeah about came about right okay so i’m gonna stir this up good in here this is easy way to cook it the very
Easiest way to cook this you know and you see these vegetables and i taste this taste so good because of the vegetables not nothing else but the vegetables this is what you call stuffed uh peppers very simple meal to do something different you know you’re feeding your kids if they like green
Pepper now they don’t like green peppers huh you know what you can do i don’t know what other people do they might call it ghetto you can just eat this with the rice put in a bowl and eat the rice with it let me show you rice and you
Need to stop see i’m gonna have too much meat because i don’t have that many peppers so what i’m gonna do is you know i’m gonna freeze this yeah i hope y’all haven’t had a happy thanksgiving i know that y’all look at my fall off the bone turkey honey that
Thing went ah it went crazy i’m glad that i so i was so happy so i don’t you don’t never want more rice than me than this right here because you want to taste but i’m gonna taste this again it’s good that’s what they came oh the vegetables so good

So i’m gonna put that like that that the only thing you need now is to stuff your pepper seed i season it and it tastes good make sure you taste it now because it’s up to you how you taste it how it tastes to you and if it tastes
Good to you i know it tastes good i’m gonna stuff these peppers right putting them in to put the rice and stuff in there stuff i’m good and here i got two uh two types of peppers put them in here that’s that’s stuffed peppers and it’s good too
Honey it ain’t just looking at a pretty picture these things taste spinny look that meat no special make sure when you’re doing it make sure you use a lot of vegetables now and then my green peppers my peppers are my bell peppers they’re good to go put some in here
A little bit more on there and you can eat this with just this and this because you got your vegetables you got your starch and you got your uh you got everything you need okay now this is what i’m gonna do i’m gonna take these right here i’m gonna take and put
The sauce on it so pour it all over your peppers and then i’m gonna do the other ones with some cheese on which i don’t do actually i’m just doing that because i saw other people do it i mean i never ate it because i could sell my old cook
But i know it’s probably good put this in there i’m gonna let this bake about because see everything is hot so it ain’t got to cook that my peppers are good i’m gonna put this in here in the oven and let it cook a little bit more save this see
This is good and i’m gonna set this in the oven and wipe this off good and set it in the oven for a while let it cook a little bit more sauce on that let it cook okay i’m gonna set it in the oven let it cook for about a good night
They’re not very long then i’ll do my um cheese i’ll come and do the one with the cheese now these are one that’s open you can do like this right here a lot of people open them but i worry about my peppers being done i don’t care about the other stuff i
Want my peppers to be good and seasoned good because you gotta eat all of this edible and all that should be good i think they look better when you have a whole pepper but not really going to taste the same but go by presentation that’s what people call meat
It’ll come out when it cooks so i’ll take some of this pepper jack cheese and lay over here so it’ll melt this pepper jack and that’s some good pepper jack too let it just melt this just i don’t know rice and cheese i don’t know how good that is together but i

Mix the rice into the sauce add cheese on top this is delicious yours look good to but try mixing the sauce into the rice meat mixture and top some with the cheese

When my mom was simmering sauce all day on the stove she would add a potato to absorb the acid from the tomatoes. I personally don't do that because peeling a potato to add to my sauce is just too much work. LOL. Love your recipe for the peppers. Just a thought but couldn't you put the flat peppers in a small baking dish top them with the meat mixture seal them with aluminum foil and just put them in the freezer. On a day when you're going to be busy taking it out let it defrost then bake it and top it with cheese. I think I just might do that myself.
Water does not remove bacteria from meat and dish soap also doesnβt really do a good job, thatβs why some meat definitely needs the use of gloves
This is no critique or criticism. As one roasted peppers, the interior volume decrease. Which makes the stuffing pull away from the wall . Rice helps. But it has to be starchy rice. Do you think a little corne starch or a bit of thicker might be okay? Love it, no complaints, just nerding π
