[This](https://www.allrecipes.com/recipe/236609/honey-garlic-slow-cooker-chicken-thighs/) has been my go to chicken recipe for a while. The results are always good, but it turns out I’m allergic to soy. I’ve been experimenting with different recipes and so far nothing has come close.
In an attempt to make something similar without soy I tried [this](https://www.iheartnaptime.net/slow-cooker-honey-chicken/) recipe. In the comments one person says they substituted wosterchire sauce for the soy. I tried that and it was okay. Then I tried using coconut aminos and that was my go to for a while, but I’ve grown to really not like it. I’m planning on trying my original recipe with coconut aminos instead of soy. Maybe that will work.
In the mean time I was trying to come up with a healthier chicken dish I could eat all the time. I’ve been experimenting with chicken breasts instead of thighs for that reason. Recently I found a few recommendations here to use chicken breasts, salsa, and taco seasoning. The results were… underwhelming. The sauce, which I typically pour over rice, was watery without much taste. I tried yesterday with thighs instead, and while the chicken was tastier, the sauce was still not great. Neither time did it turn out anyhwere as good as my original recipe. I tried adding some honey today. I’ll see how that turns out.

Anyway, I meant for this to be a simple question about why this chicken recipe (salsa and taco seasoning) is turning out so underwhelming and wound up elaborating a bit. People often recommend salsa and chicken as a simple slow cooker dish and it’s always just been meh to me.

Maybe try some more taco seasoning in it? Or a jar of jalapenos?
A word of caution, worchestershire sauce often contains soy.
Try anchovies, mushrooms or fish sauce.
I like adding salsa as a topping instead of right into the slow cooker. I like the texture and taste better that way.
In the slow cooker try adding onions & chicken & season as you’d like. I always use about 1.5x the seasonings a recipe calls for if I’m slow cooking it because I find sometimes it ends up bland otherwise.

You aren’t adding any water to it, are you?
Also which salsa? That can have a big impact as some are on the watery side. I generally use Pace for it.
