For the sweets:
4 medium/large sweet potatoes, halved and scored
Olive oil
Salt

For the olive salad:
1 cup pitted olives, finely chopped
1/4 cup roasted red peppers, finely chopped
3 tbsp sun dried tomatoes, finely chopped
1/2 cup chopped parsley
1/2 cup chopped pistachios
1/2 cup crumbled feta
2 cloves minced garlic
1/3 cup minced onion
1/2 tsp lemon zest
1/4 cup olive oil
1/2 tbsp honey
Juice of 1/2 lemon
1/2 tsp salt
Handful arugula

For the chickpeas
1 can chickpeas
1 tbsp olive oil
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp paprika
1/2 tbsp honey

Tahini:
2 tbsp tahini
1 tbsp honey
Water to thin

1️⃣ Preheat the oven to 425. Line 2 sheet pans with parchment paper and set aside. 2️⃣Drizzle olive oil on the bottom of one sheet pan, season with salt and place the sweet potatoes face down. Drizzle the tops with the oil and season with salt. Place in the oven for about 45-55 minutes, flipping after 20-25 minutes. 3️⃣Make the chickpeas. Add all ingredients to a bowl and toss to coat. Place the chickpeas on the other sheet pan and bake for 15-19 minutes, tossing halfway. 4️⃣Make the olive-feta salad. Add all ingredients except the arugula and toss to combine. add the arugula and toss again. 5️⃣ Make the tahini. Add the tahini and honey and mix to combine, then add water 1 tsp at a time and mix to desired consistency. 6️⃣Remove the sweets from the oven, then gently smash each sweet potato to create a large cavity. Add a few spoonfuls of the salad to each, then some chickpeas and a drizzle of the tahini.
