I had this in a restaurant once how would I cook my salmon and potatoes to look like this, assuming I know nothing

    Honestly that salmon looks overdone. 

    But if you really want to recreate it, it was probably done with a carbon steel pan which was preheated well prior to oil then salmon going in. 

    Don’t move the salmon until it gets brown. 

    How do you know it gets brown, pay attention to the sides at the very bottom, just above the pan. 

    Do NOT flip before it is well browned. 

    Once flipped cook on the other side u til done. 

    The potatoes are a little bit more difficult.

    They could be baked, or boiled.  Probably boiled in salty water and held in a heat drawer.

    Coat potatoes in oil of choice and salt, wrap in aluminum foil and cook in oven for 30-40 minutes at 425 degrees Fahrenheit

    Salt, season ( looks like just salt and pepper)
    Heat pan with oil and place salmon skin side up and sear for about 3-4 minutes on medium high heat
    Flip over add water to fill to about 1/4 of salmon filet height ( can finish in oven on flipped, salmon will be done when water evaporates) or you can put water and a lid to finish cooking salmon

    Overbook some potatoes in nice salty water leave out to cool and dry out for ages.
    Pan sear the salmon until the skin is dry and overcooked. Done!

    For a crispy skin salmon:
    Place salmon in a tub of salted water to brine at room temp for about 15 minutes. Turn the oven broiler on (high if more than 1 broiler setting available) dry the salmon then brush with a little oil, season with kosher salt and herbs of choice (I love a prepped salmon rub but onion powder, garlic powder, paprika & parsley flakes are others I like) place the salmon filets on a aluminum foil covered pan and put it on the 2nd to top level under the broiler for 5 minutes. After 5 minutes there will be a nice crust, move the pan down to the 3rd or 4th shelf to cook for an additional 5-7 minutes, depending on your oven and how well done you like it. (The salmon you buy at a fish monger will be higher quality than that at the grocery, which makes all the difference. It’s likely the shop will have a salmon rub to make seasoning easy too).

    Potatoes are great in an air fryer. Cut in 1/2 or quarter, coat in olive oil and some sea salt. Cook at 400 for 10 minutes shaking the drawer every few minutes for even cooking.

    Those dry ass potatoes look sad.

    Fish: medium high with oil. Let fry until you see the fish is half way cooked from pan to top. Flip and let fry for 2 minutes. Turn of heat and leave on the side as you prepare your plate with sides.

    Potatoes: use small potatoes, we have a type called deli potatos or amadine. Fill pot with water that covers potatoes. A handfull of sea salt and let cook until done. When the water is removed you will have the salty cover.

    I don’t know about those unhappy-looking potatoes, but I certainly know how to fry a salmon fillet: put a little peanut oil with a small knob of butter in a stainless-stell frying pan on medium heat, heat until bubbly, put in the fillet and set a timer for 90 seconds. Flip over, give it another 90 seconds. If you really want it more cooked, up that second side to two minutes but no more: salmon needs to be what some would think of as undercooked.

    They look like salt potatoes to me. If you google a recipe for “salt potatoes”, you might get some good ones. Basically you take whole, small potatoes and boil them in heavily salted water for a long time. They absorb all the salt and get steamy and soft on the inside with a good texture of bite to bite through the outside, and you can serve them with melted butter or a sauce.
