I’ve made [this recipe](https://www.seriouseats.com/all-american-beef-stew-recipe) a number of times and it’s a favorite. Was wondering if folks had any variations or changes to the recipe they’ve found were nice adds or tweaks.

  1. Look up the Irish stew. It’s basically this recipe with Guinness, chocolate and coffee to bring out the roasty flavors.

Agreed this is an excellent recipe. Labor intensive but it pays off

  3. Beef cheek is an insanely good cut of beef for stewing if you can find it — that’s our family’s go to for stew night

I double up on veggies. Love me some good stewed vegetables.

I’d like to know if anyone has a good sub for the tomato paste for allergy reasons. This stew looks fantastic but I don’t want to sacrifice flavor!

This is my favorite Kenji recipe of all time. It’s so good. I don’t use the anchovies and just add extra MSG.

Small, but I added celery to the final veg.  I like it in the tooth of the final mix.

I usually add red pepper flakes cause I like stew with some heat. I almost always sub the pearl onions for rough chopped white onion cause the pearls are a pain to find here. Also one time I made it with pork shoulder and it worked but it was very rich and there was a lot of fat to skim.
