Trying the Cheesy Peasy Lemon Squeezy Risotto recipe from EveryPlate. It was decent. Minimal prepping but it is hands on cook having to stir and and in more water in small amounts. The recipe said to use 9 cups of water for servings for 4. I tested it and the rice was done with probably a cup of water left so I only used about 8 cups. My husband is not much a fan of mushy foods or meals that don’t have meat, so I cooked a chicken breast separately to slice and put on top. 8/10

Tonight we’re trying cheesy peasy lemon squeezy risoto from every plate um estimated prep time five minutes readying 45 not much to prep really we need to zest and quarter the lemon and slice the onions other than that that’s all the prepping and then we just need to

Simmer the water and cook the onions and get to it so we’ll get started okay our onions are sliced the lemon is zested and and cut and the water is on the stove to simmer that took just about 5 minutes so right on with the estimated

Prep time so now we are ready to start cut um cooking the onions and getting started we’re done cooking that took about 40 45 minutes which is what it says it’s ready and so I guess we’re pretty close there doesn’t quite look like the picture it’s not super

Appetizing looking but uh we’ll see how it tastes Dinner’s Done um everybody liked it it was okay my husband is not super fond of mushy foods or foods that don’t have meat so I did make a chicken breast that we sliced up and had on top

With it and that was fine too um for the three of us we had the servings for four and we all had seconds and there’s still quite a bit left um so that was quite a bit of food for us um overall we’d probably rate it8 out of 10
