For the recipe (2 portions)
125 g spaghetti
100g pancetta
1 big zucchini (300g)
1 egg mixture
For the Egg mixture
3 large eggs
25g grated hard cheese
freshly ground black pepper (a lot!)
Salt to taste
Recipe
1) Prepare the egg mixture first by combining all the ingredients. Some recipes use egg yolk too or only that but it would require more of it.
2) Dice your bacon in little squares. Cut the courgette too. I like it in bigger pieces.
3) In the skillet, without any oil, cook the bacon on low heat to release more fat. As it gets crispier, add the courgette pieces to cook. When it turns soft, turn off the heat.
4) Cook the pasta in hot water (I add salt to it ) and when it gets al dente, drain it and put it straight in your skillet. It should cook down a little. Then put your egg mixture and immediately mix it so your eggs start cooking slowly. 5) When we’ll mix, turn on the heat on low and cook until it gets silky.
Taste the sauce and adjust with the salt now. Serve it immediately after that with some finishing grounded black pepper.
6) Enjoy!
