Used the Goldees method, smoked at 250. Got done a little sooner than I thought it would so might have to check my smokers internal temperature accuracy. Let it rest overnight at 150 in the oven. Wound up resting for 18 hours because everybody was super late because we had to change plans a little. Turned out fantastic. If anything the long rest time might have made the point a little more fall apart than I would’ve preferred but pretty good for a brisket I would say.

    I’m glad I read your comment about the long rest, looked a bit overcooked as it fell apart, but the long rest explains that. Good looking bbq sir, nice job. And that’s naked, then tallow at the wrap for goldees? Never tried that one but yours looks perfect.

    Put a kitchen towel under your cutting board. It will solve ALL of your problems :).

    OP, it looks great. I’ve yet to try this method, but I will on my next brisket.
