One of my favorite IP recipes. It’s the only one I have down by memory and make several times a year. I halve the fish sauce, don’t know if it’s the Red Boat brand but I CAN taste it in the finished product otherwise.

    I love pork chile Verde. This looks great!

    Place I went to in Denver (I think?) had a bunch of variations on eggs Benedict, one being with that. Can’t remember what the base was, maybe traditional English muffin, could have been a slice of cornbread or a hash brown cake. Poached egg, Chile on top. It was banging, give it a shot.
